Fun piece in the NY Times yesterday on the art (and necessity) of quick knife skills when there are small children to be attended to (um, that didn’t quite come out right did it?).

What I mean is you need to slice and dice with the best of them if you want to get food on the table before the dinnertime meltdown.

Celia Barbour captures the intensity of the time-trial, multi-tasking prep we all have to perform when trying to conjure up a home-cooked meal within 30 minutes of getting in from work.

Personally, I think it’s all got to do with good knife selection (I’ll take the Global 20cm cook’s knife every time) and a crisp glass of Granja Fillaboa Albarino to both relax and focus the mind.
