Tortilla Beet Salad Wrap Thingy

I’’ve always hated wraps. Maybe it’s because I don’’t like biting into a burrito and getting ambushed with a salad. But that’’s exactly what I did to my kids the other day, when they refused to eat a green salad we’’d made for them.

It was full over other good stuff: shredded beats and carrots, mesclun mix, a standard not too acidic lemon dressing, some grated parmesan.

I got some tortillas and wrapped up the salad for them and they eagerly polished off more salad than usual in this starchy vehicle. Even better, it was whole wheat tortilla.
