Sometimes simple is best.
All last week we were cooking up and eating out some yummy stuff. A bit of pork loin, a bit of Korean, even the banker – homemade spag bol with lots of Parmigianno Reggiano.
But each day our 4.5 year-old, Dylan, visibly exhausted from his first ever week in school, kept asking for simple food.
Ramming home the need for comfort fayre, each time he read his favourite nighttime book, You Choose “If you could do anything, what would you choose?”, he would pick the sausage and mash option (great book by the way).
So tonight we cooked up a simple but delicious family dish – organic pork sausages, buttery mashed new potatoes (with the skins left on) and mix of Kale and green beans sauteed in olive oil and garlic.

Okay, don’t laugh.. so it looked a bit funny but we trying to mimic You Choose (without cooking 10lbs of potatoes)
After that school didn’t seem quite so hard after all.
