A homemade fricassee bought from a market stall in Bedarieux. The locals make their version with ham, potatoes and green beans, which they slow-saute together with garlic and tomato until the mixture takes on a slightly mushy texture.
If I was making this at home I’d par-boil the potatoes and beans first so soften them up then serve with a tomato and onion salad.
It’s the sort of all-in-one-dish that defeats even the pickiest of eaters as the flavors filter through all the components making everything taste like garlicky, tomatoey ham!
