I'd never tasted this dish before and, frankly, was a little skeptical about how good it would taste. But the stewing in soy, sake, garlic and red pepper flakes is inspired. If I was making this purely for a family meal I would reduce the red pepper flakes….but you knew that!
Here's how the recipe goes..
1 pound of boneless chicken thighs or breasts, cut into 1 inch cubes
2 medium potatoes cut into 1 inch cubes
1 onion chopped
1 tablespoon or red pepper flakes
2 teaspoons crush garlic
1 teaspoon of brown sugar
3 tablespoon of soy sauce
1 tablespoon of rice wine (sake)
2 teaspoons of sesame oil
1/2 cup of water
4 ounces of scallions in 1 inch strips.
Very simply, combine all the ingredients (apart from the scallions) and mix together. Cover, bring to the boil and cook for 20-30 minutes over a medium heat. Add the scallions and cook for three more minutes.
It's that easy and is really delicious.
